Grilled Mango, Tomato, and Burrata Platter Recipe

Ingredients:

  • 1 large mango (around 250g), peeled and cut into wedges
  • 1 tsp rapeseed oil
  • 90ml lime juice (around 3-4 limes)
  • 80ml fish sauce
  • 80g soft light brown sugar
  • 2 garlic cloves, minced
  • 1-2 red bird’s-eye chillies, finely chopped (depending on preference)
  • 450g tomatoes, halved (mixed cherry tomatoes work well)
  • 1 long shallot, finely sliced
  • Large handful basil, finely chopped, plus a few small leaves to garnish
  • Small handful Thai basil, finely chopped
  • 2 spring onions, finely sliced
  • 150g burrata

Method:

Step 1 – Grilled Mango:

  1. Heat a griddle pan over medium heat.
  2. Toss the mango with rapeseed oil, then grill the wedges for 2 minutes on each side until char marks appear.
  3. Transfer grilled mango to a large bowl and toss with 10ml of lime juice.

Step 2 – Dressing:

  1. Whisk the remaining lime juice with fish sauce, soft light brown sugar, minced garlic, and chopped red chillies.
  2. Combine half of the dressing with tomatoes, shallot, and herbs.
  3. Allow the tomato mixture to sit for 10 minutes to let the flavors mingle.

Step 3 – Assembling:

  1. Toss spring onions with the tomato mixture.
  2. Arrange the mixture on a serving platter.
  3. Add the grilled mango on top and place the burrata.
  4. Break open the creamy cheese center and garnish with extra basil.
